Building

This month is our four year anniversary of owning the former Williams Feed building. We have been busy in the Small Tasting Room. Derek installed repurposed old-growth fir flooring (see picture above) and Katrina finished it with commercial-grade poly. Katrina finished the rough-hewn bar top so that it’s waterproof and durable for the Walk Up Window. Just this week, Derek and L&J Plumbing connected the water and water heater, bringing us one step closer to opening!

Business / Community

In July 2024, we reported on a federal district judge ruled that the 1868 ban on home distilling was unconstitutional. Two weeks ago, the 5th Circuit Appeals Court also ruled that ban unconstitutional. According to this article, the government has 90 days to seek review from the Supreme Court. Pretty soon, it might be legal to distill at home, just like people can homebrew and make their own wine. 

Distillery

We bought a two-keg kegerator for the Small Tasting Room. The first keg tap is for our handcrafted ginger beer – the same one locals have sampled at the Dillon Farmer’s Markets the last few years. What's on the other tap? Sparkling water. We’ll mix it with shrubs, grenadine, or tonic syrup. While there are a variety of small batch tonic syrups available, Katrina is working on one that will perfectly pair with our gin and a fresh lime.  

Soon, Derek will start moving distillation equipment into the production space. We talked about our 500gal pot still last year. With it, we’ll make whiskies, vodkas, and gins. If you’re interested in the chemistry behind fermentation and distillation, here is a great 3min video on the process.
